Meen Pollichathu(Fish in Banana Leaf Wraps)

Ingredients: 1 Whole Fish,cleaned  (i have used Tilapia) For the Marinade: Red Chilli powder - 2tbsp Turmeric powder - 1/2tsp Ginger-garlic paste - 1tbsp Salt to taste For the Masala Shallots  - 10 -15 Tomato - 1 ,big Red chilli powder - 2tsp Turmeric powder - 1/2tsp Ginger-garlic paste - 1tbsp Green chillies - 3 Curry leaves Coconut oil Salt For the Wrap Banana Leaf Method: Clean the fish and make deep slits in it.Marinate with the ingredients under marinade and keep it for atleast 2 hr.Heat oil in a pan .Shallow fry the fish with the marinade by flipping each side till it is done.(Do not overcook the fish) Heat oil in a pan.Add the chopped shallots.ginger-garlic paste,curry leaves and green chillies.Saute well till the onion become translucent.Add chopped tomato and cook it for sometime.Add spice powders,salt and mix well. My dear Friends, I wish you a very happy x'mas and a prosperous, happy and healthy new year 2010. Wish you a happy blogging year ahead. :) For those who are heading for holidays, wish you a happy time with your family... Talking of holidays, am going to have my holidays as well. We are shifting from Netherlands to Malaysia. My husband has a new project there. Am feeling really sad to leave Netherlands, but at the same time, feeling excited about the new place. :) Anyways, for now, am going to be back home in Kerala for a while before we shift to Kuala lumpur. So i guess i will have reduced blog activities atleast for sometime now. But will try to log in every now and then. We will keep in touch. :) Sree...

No Bake Cheesecake with Cherry Topping

Ingredients: For Crust Marie Biscuits (Powdered)- 200g Butter - 100g For Cream cheese Layer Paneer - 350g Condensed milk - 1tin Honey - 6tbsp Sugar - 2tbsp Egg yolks - 2(optional) Lemon Juice - 1tbsp Gelatin - 1tbsp Cold water - 1/4cup Topping Cherry pie filling - 1 can Method: 1 Soak gelatin in cold water.Set aside. 2 Heat butter in a pan .Add the powdered biscuits and mix well till get a nice aroma. 3 Take a spring form pan and put the mixture.(use springform pan for this.) 4 Press the crumbs evenly over the bottom  and refrigerate it for 10 minutes. 5 In a blender add paneer,condensed milk,honey,sugar,egg yolks and lemon juice.Blend to a smooth consistancy. 6 Double boil the soaked gelatin.Add this to paneer  mixture.Mix well. 6 Pour this over the biscuits layer.Again refrigerate it  for 30minutes. 7 Spread topping over the cheese layer. Gobi Manchurian

Ingredients: 1 medium Cauliflower(Gobi)- seperated into small florets 3tbsp All purpose flour 2tbsp Corn flour 1/4tsp Pepper powder 2tsp Vinegar 1tsp Soy sauce 2tbsp tomato sauce 1tbsp red chilli sauce 1 tbsp Ginger- garlic paste 1 Onion 5 garlic chopped 2 Green chillies 1/4 cup Spring onions Oil for frying Salt Method: 1)Clean the cauliflower and soak into hot water mixed with turmeric and salt.Drain the water completely and pat dry with a kitchen towel. 2)In a bowl mix the flours ,salt,pepper powder and 1tbsp ginger-garlic paste with little water. 3)Heat oil in a pan.Dip each florets in the flour mixture and deep fry it until golden brown. 4)Remove from oil and drain it in paper towels. 5)Heat 2 tbsp of oil in a pan.Add chopped onion,garlic,green chillies and ginger-garlic paste.Saute well for 3 minutes. 6)Add soy sauce,tomato ketchup,red chilli sauce and vinegar.Saute well.Adjust the salt. 7)Add the fried Gobi florets and mix well until all the florets are well coated with the sauc

Broccoli Thoran/Stir Fry

Ingredients: Broccoli - 1/2 kg Chopped Onion - 1 Crushed Garlic - 3 Green chilli - 2 Grated Coconut - 1/2 cup Turmeric powder - 1/4tsp Mustard seeds Curry leaves Salt Oil Method: Wash broccoli and cut into small pieces.Heat oil in a pan.Splutter mustard and curry leaves.Add crushed garlic,onion,turmeric and green chillies.Saute well till the onion become soft.Pour 1/2 cup of water , broccoli and required salt.Cover it and cook it on low heat.Stir in between and add coconut .Mix well and switch off the stove.Serve hot with rice.

Vattayappam(Steamed Rice Cake)

Ingredients: Raw Rice - 2 cups Grated coconut or coconut milk - 1cup Cooked Rice - 1/2 cup Yeast - 1/2tsp Sugar -1/4 to 1/2 cup,use it accordingly Salt - a pinch Cardmom powder - a pinch For Garnishing Cashews and raisins(optional) Method: 1)Soak the rice in water  for 4 -5hrs.Grind with cooked rice sugar and coconut milk.You can add 1/2 cup water if the batter is too thick.It should be like idly batter. 2)Meanwhile add the yeast in 3tbsp of lukewarm water. 3)Add  yeast mixture to the batter and mix well. 4)Cover it with a lid and keep it in a warm place for 8- 10 hrs to ferment. 5)Just before preparing add salt and cardmom powder.Mix well. 6)Grease a flat pan with little oil and pour the batter.Top it with cashews and raisins. 7)Steam it for 15-20 minutes on medium heat or until it is done. 8)Allow to cool and cut into desired shape. Notes: 1) Cooked rice will give a nice spongy texture to Vattayappam. 2)You can use the same batter for palappam as well.

Paneer Butter Masala

  Ingredients: Paneer - 200g(i have used homemade Paneer) Butter - 3tbsp Onion -2(grind to fine paste) Tomato puree - 2,tomato Ginger-garlic paste - 1tbsp Curd - 4tbsp Cashew Paste - 1/4cup Kashmiri Chilli powder - 1tbsp Coriander powder - 1tsp Turmeric powder - 1/4tsp Cumin Powder - 1/2tsp Garam masala powder - 1/2tsp Kasoori Methi - 1tbsp Coriander leaves Oil - 2tbsp Salt                                         Homemade Paneer   Method: 1)Heat oil in a pan.Shallow fry the paneer cubes on medium heat until golden brown.Set aside. 2)Heat 1tbsp butter in a pan.Add onion paste ,ginger-garlic paste and saute well for 3 minutes. 3)Add tomato puree and simmer for 5 minutes. 4)Add all the spice powders ,kasoori methi and salt , mix well . 5)Pour curd and remaining butter to this and boil it. 6)Add the paneer and cashew paste to this.Gently mix well. 7)Garnish with coriander leaves.Serve with any indian breads.  

Prawns Biriyani

Ingredients: For Prawns Masala King Prawns - 25 to 30 nos Chopped Onion-1,big Chopped Tomato - 1,big Ginger-garlic paste - 1tbsp Green chillies - 2 Turmeric powder - 1/4tsp Red chilli powder - 2tsp Biriyani Masala - 2tsp, see below Coriander leaves Mint leaves Salt Biriyani Masala Cinnomon  - 1big piece Cardmom - 3 Cloves -3 Nutmeg -1 Caraway seeds- 1/2tsp Fennel seeds -1/2tsp Cumin seeds-1/2tsp Mace-2 Dry roast all together and grind to a fine powder. For Rice Basmati rice - 2cups Ghee - 2tbsp Cinnamon - 3pieces Cardmom - 2 Cloves - 3 Star Anise - 1 Water Salt For Garnishing Saffron strands soaked in 2tbsp milk Fried Cashews and raisins Fried onions Biriyani Masala - 1tsp Coriander leaves Method: Preparing the rice 1 Soak the rice for 30 minutes. 2 In a pan add 2tbsp ghee , cloves,cinnomon ,Star anise and cardmom.saute well for a minute. 3 Add the washed rice and saute it for sometime. 4 Pour 3cups of water and salt to the rice. 5 Cook  rice till soft and all the water is absorbed.

Vegetable Oothappam

  Ingredients: For Dosa Raw rice - 2cups Urad dal - 3/4 cup Cooked Rice - 3tbsp Fenugreek  - 1tsp Method: Soak the rice , urad dal  and fenugreek overnight(5-6 hrs).Grind them with cooked rice and little water.Dosa batter should be fairly thick.Cover it and keep it aside until the batter ferments. For vegetable oothappam Required vegetables (Grated carrot ,chopped tomato,onion and coriander leaves) Method: Heat dosa tava and drop a big spoon of water.Spread it around,make sure it is little thicker than dosa.Sprinkle generously with the chopped veggies and let it cook.This has to done as soon as the dosa batter is spread and when it is still liquid and not cooked.That helps the veggies to stick to the batter.Flip to cook the other side.Serve with chutney or sambar.

Tuna Thoran

Ingredients: Canned Tuna( in water) - 1 Shallots - 5,chopped Coconut - 5tbsp Green chilli - 1 Ginger,chopped -1tbsp Turmeric powder - 1/4tsp Chilli powder - 1tsp Garam masala - 1/2tsp Mustard seeds Curry leaves Oil Method: Open the tuna can and drain it.In a pan heat oil and splutter mustard and curry leaves.Add chopped shallots , ginger and green chilli.Saute well till the onion become translucent.Add all the spice powders and mix well.Add the tuna and saute for a while.When it is almost ready add  grated coconut to this.Stir well. Serve with rice or chapati.  

Mushroom Masala

Ingredients: Button Mushrooms -  2 cups(cleaned and chopped) Onion - 2,chopped Tomato -2,chopped Ginger-garlic paste -2tsp Green chillies - 3 Turmeric Powder - 1/4tsp Coriander powder -1tbsp Chilli powder -1/2tsp Garam masala powder-1/2tsp Pepper powder- 1/2tsp Coriander leaves For seasoning: Oil Whole garam masala(cardmom,cinnamon,cloves) Fennel seeds -1tsp Method : Heat oil in a pan.Add fennel seeds and whole garam masala.Saute well for a minute.Add chopped onion,green chillies and ginger-garlic paste.Saute it till the onion become transparent.Add chopped tomato to this and cook well.Add all the masala powders and saute well till the raw smell goes. Add the chopped mushrooms and mix it with the masala.Pour 2tbsp of water and salt .Cover it and cook the mushrooms.Stirring in between to prevent burning.Garnish with coriander leaves.Serve with Chapati .

Cherupayar(Green gram) Curry

Ingredients: Whole Garam masala(Bay leaf,cloves,cardmom and cinnomon) Whole Grren gram - 1 cup Mustard seeds - 1tsp Onion - 1 Tomato - 1 Ginger-garlic paste - 1tbsp Green chillies - 1 Chilli powder - 1/2tsp Turmeric powder - 1/4tsp Coriander powder - 1tbsp Curry leaves Salt Oil Method: 1)Soak the green gram overnight.Pressure cook it with water and salt.Keep it aside. 2)In a pan add oil and splutter mustard seeds and curry leaves.Add whole garam masala and saute well. 3)Add green chillies and ginger-garlic paste.Saute for a while. 3)Add chopped onion and saute well till it become golden brown colour. 4).Add all the masala powders.Mix it and add the chopped tomato to this.Cook the tomato. 5)Pour the cooked green gram to this.Mix well and boil it for few minutes.Adjust the salt. 6)Serve hot with chapati or rice.

Spicy Chicken Roast

Ingredients: Chicken Drumsticks - 4 Lemon Juice - 1tbsp Chopped onion -2,medium Chopped tomato -1,big Ginger-garlic paste -1tbsp Green chillies -1 Chicken masala powder - 1tbsp Garam masala powder - 1/2tsp Coriander powder - 1tbsp Turmeric powder - 1/4tsp Chilli powder - 1tsp Vinegar - 2tsp Coconut slices - handful Curry leaves Oil For Marinade: Chicken masala powder - 1tbsp Turmeric powder - 1/4tsp Chilli powder - 1tsp Pepper powder - 1/2tsp Lemon Juice - 1tbsp Salt Method: 1.Wash the chicken pieces and soak in water along with 1tbsp lemon juice for 5-10 minutes. 2.Drain the water and make 2 or 3 deep slits in each pieces. 3.Prepare a marinade using the above ingredients and apply nicely to each pieces.Refrigerate it for an hour. 4.Heat oil in wide pan and saute the onions till it become translucent. 4.Add ginger-garlic paste,green chillies. 5.Add all the masala powders and mix well till it become nice dark colour. 6.Add chopped tomato ,curry leaves and vinegar.Saute well till the to

Murukku

Ingredients: Roasted Riceflour - 2cups Urad dal - 3tbsp Melted Butter - 4tsp Asafoetida  -1/4tsp Sesame seeds  - 1tbsp Cumin seeds -1tsp Fennel seeds - 1tsp Chilli powder - 1tsp(optional) Water as reqd Salt to taste Oil for frying Method: Dry roast urad dal and grind into a fine powder.Mix it with rice flour.Add melted butter and mix well.Add sesame seeds,fennel seeds  cumin seeds,asafoetida,salt and chilli powder.Add required amount of water and make a smooth dough.Dough should not be too stiff or too loose. Stuff the dough into 'murukku press' and press into a butter paper simultaneously coiling them into spirals.Heat enough oil in a pan.Gently take the murukku from the paper and drop in slowly into the hot oil.(be very careful while dropping them).Deep fry it and allow them to cool.Repeat the process till the rest of the dough is done.Cool completely and store it in an airtight container.Serve with tea.

Aloo Gobi Masala and a Repost

Ingredients: Potato(Aloo) - 2 Cauliflower florets (Gobi) - 2cups Onion.choped - 1 Tomato -1 Ginger-garlic paste -1tbsp Green chillies -2 Cashew paste - 1/4cup Fennel seeds - 1tsp Cumin seeds - 1tsp Dry mango powder - 1/4tsp Turmeric Powder - 1/4tsp Coriander Powder - 1tbsp Garam masala Powder -1/2tsp Coriander leaves Oil Method: In a microwave safe bowl add the cubed potato along with salt and 2tbsp water.Cover it and Microwave it on high power for 4 minutes.Do the same with Cauliflower also. Heat oil in a pan .Splutter the cumin and Fennel seeds.Add ginger-garlic paste,onion and green chillis.Saute well till the onion become soft.Add the chopped tomato and cook well.Add the spice powders along with 1tbsp of water.Saute well.Add half cooked aloo and gobi to this.Mix it and Cook well.Add Cashew paste on last stage ,mix well and adjust the salt.Garnish with coriander leaves.Serve with any indian breads.
